One pot Lamb Karahi

On days you have so much to do and need to spend as little time as possible by the stove. This is for you. A hearty, delicious lamb karahi that’s super easy to make and doesn’t compromise on flavour at all!

Ingredients

  • ½ cup oil or ghee
  • 1 tsp cumin seeds, 2 bay leaves, 1 cinnamon stick
  • 3 medium onions sliced
  • 100g Magic Masala
  • 6 large tomatoes on the vine chopped / blended (or 1 tin plum tomatoes)
  • 1kg lamb (preferably on the bone) leg works well with this
  • Fresh coriander

Instructions

  1. In a large pot add all your ingredients apart from the coriander and stir on a high heat until heated through then turn the heat down low and simmer for 1hr 45 / 2hrs or until cooked and meat is tender.
  2. Keep checking periodically, if it’s sticking, add a little water and turn heat down.
  3. Finish with freshly chopped coriander
