Skinny Bean and Sweet Potato Stew

The best thing about MM is it’s so nutritious yet low in fat so it’s very easy to create healthy meals. This skinny bean and sweet potato stew tastes anything but skinny. Packed with flavour and veggies it’s an absolute delight with rice, jacket potatoes, chappati or flat bread. It’s even delicious in its own, it’s so tasty make sure you grab a big bowl, you’re going to need it!

Ingredients

  • 1 tbsp. oil
  • 1 heap teaspoon mustard seeds
  • 2 large onions
  • 75g Magic Masala
  • 2 tins plum tomatoes or 2 cartons sieved passata
  • 4 sweet potatoes cubed
  • 1 tin sweetcorn
  • 1 tin chickpeas
  • 1 tin red kidney beans
  • 2 heap tsp sugar
  • 15 curry leaves
  • 5 tbsps. oil for mustard seeds but this will be drained before adding to the stew
  • Fresh chopped coriander

Instructions

  1. Add Ghee or oil to pan and allow to sizzle (2 mins)
  2. Sauté chopped onion in oil until softened. This process takes a little longer without the use of much oil. You can add a splash of water if the onions are sticking (5-7 mins)
  3. Add 75g of MM and 50ml of water to loosen the MM Cook until water evaporates, and oil is visible around the edges (3-4 mins)
  4. Add 2 tins of plum tomatoes or sieved passata and simmer until this has reduced. Cover with a lid and keep stirring on a low heat (20 minutes)
  5. Add all the veggies and approx. 200ml water and simmer until cooked. Add enough water for the consistency you desire. Add 2 heap teaspoons of sugar.
  6. In a new pan add a small amount 5 teaspoons of oil and heat. Then add mustard seeds and curry leaves and cook until the mustard seeds have popped (be careful not to burn). As soon as they have popped, remove, and drain using a small sieve, add to the stew and mix through. These give the stew an amazing aroma and flavour without the oil.
  7. Garnish with freshly chopped coriander and be sure to use the stems - they add an amazing crunch!
  8. Serve with rice yoghurt or low-fat sour cream, salad and enjoy!

Chef's Tips

You can add some chopped spinach to the stew for some added greens.
