Ingredients
- 1 finely chopped onion 2 tbsp. ghee / oil
- 1 tsp cumin seeds
- 50g Magic Masala
- 1 large chopped tomato
- 250g washed & soaked Split red lentils
- Fresh coriander
Instructions
- Add washed lentils to a pan and cover with water, 1 inch above the lentils with 1/2 teaspoon of salt. Cook until soft and mushy. Scoop out foamy layer whilst cooking (10-15 mins)
- Whilst lentils are cooking, Add Ghee or oil to pan. Add cumin seeds and allow to sizzle (2 mins)
- Saute finely chopped onion in oil until softened and golden (5-7 mins)
- Add 50g of MM and 50ml of water to loosen the MM Cook until water evaporates, and oil is visible around the edges (3-4 mins)
- Add chopped tomatoes and simmer until thickens, colour darkens, and the moisture evaporates (5-7 mins)
- Add cooked masala to the pot of cooked lentils. Stir and add water to desired constancy. Simmer (2-3 mins)
- Add chopped coriander and serve with a squeeze of fresh lemon
